A northwest dish——Big Plate Chicken.
Big Plate Chicken is a famous northwest dish in Xinjiang municipality, China. No one in china doesn’t know it and most Chinese love it, especially people in the north region. Originated in late 1980s, the main ingredients of it are chicken nuggets and potato pieces, with leather noodles cooking with them. Colorful, smooth and spicy chicken and soft, waxy, sweet potatoes, spicy incense, coarse with thin, is one of the best dishes of the table. So, do you want to taste it? Now, I’d like to tell you how to cook it.
1.Ingredients
Two chicken legs, two potatoes, two chicken wings, one green pepper, one red pepper,  half an onion, one ginger, some pieces of garlic, twenty ml edible oil, two scoops of bean paste, fifteen rock sugar, one gram salt, ten ml soy sauce, two star anise, five grams pepper, two pieces of geraniol, five grams of dried chili and a can of beer.
Steps:
1.Chop the chicken legs and chicken wings into pieces. Peel and cut potatoes. Cut the onion and peppers into pieces. Cut ginger and garlic into slices. Cut dried red pepper into sections.
2.Wash the chicken till there is no red blood in the water.
3. Put the oil into the pot. After the oil is hot, put the star anise, pepper, dried peppers, bay leaves, garlic, ginger into the oil and stir fry them, stirring them with the scoop. After a while, Put the bean paste into the pot and stir fry them till the boil becomes red. Then put the chicken into the oil. Stir fry them for 1-2 minutes. Add sugar, soy sauce and stir fry them until the chicken has color. Pour some bear and a bowl of water into the pot. After the pot is boiled, turn around to small fire and simmer for 15 minutes. Put the potatoes into the pot and simmer for another 15 minutes.
4. Put the green peppers, red peppers and onion into the pan and stir fry them then use big fire to shrink juice.
5. Put a teaspoon of salt to increase the taste, and then add a teaspoon of chicken powder stir frying evenly. Finally, the food can be put in a big plate. So a delicious dish can be served on the table.
