Delicious Beijing Roast Duck.
Roast duck is a famous dish in Beijing with a world reputation. It was developed by Chinese han people in the Ming dynasty. It was a palace food at that time using high-quality meat duck-- Beijing duck. It’s color is red, the meat is fat and not greasy, the outside crispy is tender, therefore is known as the delicious food around the world.
The Beijing roast duck is very complicated. First, defrost the duck, remove duck's bottom and fat skin and wash it. Then use a big pot of water to hold the duck, add ginger, spring onion ,baking powder and duck to boil until bubble. Turn the duck upside down and scoop the duck out again. Then pour the coke over the duck, again with white wine, use the kitchen paper to stain the white wine, and wipe the duck. Then tie the two legs of the duck, and hang them up in a ventilated place for four to five hours. Finally put the duck into the oven, bake it in a preheated 375F oven for 40 minutes ,turn over the duck and bake it for another 40 to 50 minutes. If you want the duck to be a better color, give the duck some honey water in the process.
People often eat Beijing roast duck with sweet bean sauce and spring Onions, then match it with the cucumber, radish. Use chopsticks to pick a bit sweet bean sauce, wipe it on the lotus leaf cake, put a few slices of duck, a few spring onions, cucumber or carrot sticks on it, and then furl the pancakes. Wow, it is really delicious!
