The burning noodles of Yibin,the one you should try when you travle in Yibin
The burning noodles is one of the most characteristic traditional snacks of Han nationality in Yibin city of Sichuan Province. The original name is Xufu burning noodles, formerly known as oil noodles, it is called the burning noodles because it burns when it is ignited.
              
We select the local high - quality noodles as main material as well as using yellow bud vegetable of Yibin , sesame oil , fresh plate oil , star anise , horseradish , sesame , peanut , walnut , golden pepper , and other auxiliary materials such as wild pepper , onion , tine peas and spinach .
After cooking the noodles and taking it out , we remove the moisture and alkali. Then we can finish the traditional process of burning noodles with adding some seasonings.
As the story goes, it is called burning noodles because there is a pinch of bright red chili on the top of it after finishing mixing it up, which is like that the fire is burning. What’s more, some say it is because it has a lot of chili. In fact, it's easy to know why. When you pick up a noodle and light it with  fire, it will burn like a matchlock.
                            

The burning noodles of Yibin is not only famous in Sichuan, but also well known all over the China. However, due to the differences of technique and materials, the burning noodles in many  restaurants out of Sichuan is not authentic enough. So if you are traveling in Sichuan, especially in Yibin, be sure to try it.
